Tahoe Brunch for a BUNCH

A recipe for Uli’s Famous Italian Chicken Sausage

 

  • Prep Time: 15 minutes
  • Cook Time:  350 degrees for 60 minutes
  • Yield: 9-12 servings

Ingredients:

  • ½ pound Uli’s Famous Italian Chicken Sausage (two links)
  • 12 slices white bread, crusts removed
  • 2-3 Tablespoons butter, softened
  • ½ cup additional butter
  • ½ pound fresh mushrooms, sliced
  • 2 cups yellow onions, thinly sliced
  • 1 pound cheddar cheese, grated
  • 5 eggs
  • 2 ½ cups of milk
  • 1 teaspoon dry mustard
  • 1 teaspoon nutmeg
  • 2 teaspoons fresh parsley

Directions:

  • Brown Italian Chicken Sausage and cut into bite size pieces.
  • Butter bread with softened butter, set aside.
  • In a 10-12 inch skillet, melt ½ cup butter and slowly brown mushrooms and onions until tender, set aside.
  • In a greased 11 X 7 shallow casserole dish, layer ½ of each of the following, bread then mushroom mixture, then sausage and then cheese.  Repeat this ending with cheese.
  • In a medium sized bowl, mix eggs, milk, mustard, nutmeg, 1 teaspoon of salt and 1/8 teaspoon pepper. Hand beat this until well blended.
  • Pour mixture over casserole, cover and refrigerate overnight.
  • Sprinkle parsley over casserole before baking.
  • Bake uncovered at 350 for 1 hour or until bubbly.
