In a 10-12 inch skillet, melt ½ cup butter and slowly brown mushrooms and onions until tender, set aside.
In a greased 11 X 7 shallow casserole dish, layer ½ of each of the following, bread then mushroom mixture, then sausage and then cheese. Repeat this ending with cheese.
In a medium sized bowl, mix eggs, milk, mustard, nutmeg, 1 teaspoon of salt and 1/8 teaspoon pepper. Hand beat this until well blended.
Pour mixture over casserole, cover and refrigerate overnight.
Sprinkle parsley over casserole before baking.
Bake uncovered at 350 for 1 hour or until bubbly.
